Cooking with Catladies--this time for brunch!
A few weeks ago, one of our fabulous foster moms held a brunch with her friends to benefit City Kitties. We were lucky enough to attend--as you can see, the food was amazing. Check out some of the recipes below. Many thanks to hosts Courtney and Ed!




Strawberry Buttermilk Pancakes
2 c flour
2 T sugar
4 t baking powder
1 t baking soda
1 t salt
2 c buttermilk
4 T butter, melted
1 t vanilla
2 eggs
1 c chopped strawberries

Mix. Let sit until you see little bubbles. Fry by 1/4 cup-fuls on a griddle. Eat and enjoy.

Tangelo-Orange Marmalade
I used this recipe:

...and added 2 T fruit pectin mixed into 1/4 C sugar, to help with the thickening.

Candied Ginger Irish Soda Bread

3 1/4 c flour, sifted
1/4 c sugar
1 T baking powder
1 t baking soda
3/4 t salt
1/2 c margarine
1 c buttermilk (I used 1 c soy milk and 1 3/4 T cream of tartar)
1 c mixed dried fruit (I used 1/4 c raisins and 3/4 c candied ginger)
generous sprinkle of caraway seeds

1. Preheat your oven to 350. Butter a round baking pan.
2. Combine dry ingredients in large mixing bowl.
3. Cut in margarine until mixture resembles course texture. Add buttermilk, caraway seeds, and raisins. Stir only until moisture is absorbed.
4. Turn mixture on lightly flowered board; knead until smooth and moist (about 1 minute).
5. Shape into round loaf and place in baking pan.
6. Cutt a cross on the top and bake for one hour or until browned on the sides/bread shrinks from the side of the pan.
